At times this year we've felt our hearts aching and at times the load has seemed lighter. One thing I've observed in 2020 is that when I focus on acting with love or practicing peace, I can find the joy in the moment. Those moments can add up. So as 2020 draws to a close (drum roll, puh-leez!!), let's look together at 2021 with hope and the expectation of stacking more joy filled moments together. Wishing you all the love in the universe, profound peace, and an abundance of joy. ⁠

I am one of three sisters. Nine years younger than my next oldest sis and 10 years younger than my oldest. I am really missing them as this year goes on and on and on. We used to meet every few weeks for lunch along the coast between Orange County where they live, and my home in San Diego. Oceanside Pier for fish and chips, Swami's O-side for Acai bowls and breakfast, and the Chart House when they took the train to Solana Beach. Sometimes my niece would meet us too. I'm really looking forward to basking in the sun with a view of the ocean while grabbing good grub with them all, hopefully soon. Hear that COVID? You're on notice...to vacate.⁠

Maybe being one of three is the reason I've always loved the name of this recipe. My version of 3 Sisters---beans, corn, squash, is served over creamy polenta. This super simple and satisfying meal can be made with canned pintos or pinquitos, frozen corn, and pre-cut butternut squash. Or if you are a bean snob like me, use @ranchogordo Pinquitos cooked the Instant Pot for 30 minutes. These beans have been eaten as taco filling, on a salad, and now in 3 Sisters over the last 4 days. ⁠
>>Add 1 cup water and 1 veggie boullion on cube to saute pan. Bring to a boil. Add 1 celery stalk, chopped and 1 cup butternut squash cubes and cook until tender. Add 1 cup frozen corn and 1-16 oz. can or 1-2 cups of cooked beans with cooking liquid. Simmer to thoroughly heat and reduce liquid volume. While soup is simmering, cook polenta in an Instant Pot for 15 minutes. My Instant Pot cookbook calls for 4 cups water to 1 1/3 cups polenta and 1 tsp. salt. Whisk together to avoid lumps and start the Instant Pot for 15 minutes. Depending on how organized you are, dinner is ready in 20-30 minutes!⁠

As requested by Dan....cole slaw. After many attempts at other recipes I came up with our favorite recipe for cole slaw dressing---not too sweet, not too vinegary, not too much mayo. ⁠
Cole slaw is great by itself, on sandwiches, in wraps, mixed with BBQ chicken or tofu, or as a simple salad addition.⁠
Cabbage packs a punch nutritionally with glucosinates that fight cancer, fiber to nourish colon health, sulfur to promote detoxification, about 1/2 of the DRI for Vitamin C and over 3/4 of the DRI for Vitamin K---an critical nutrient for healthy blood, bones, and heart health.⁠

In a nutshell: Whisk together dressing ingredients: avocado mayo, white pepper, french herb mix, rice vinegar, and a pinch of agave. Then toss with cabbage mix or finely shred whole cabbage in a food processor.⁠
